Question about home canning; science behind advice?
In home canning directions, it often says NOT to use a metal spatula to release any trapped air in the jar. Why is that? I want the scientific reason, please.
I personally can with both a pressure canner for low acidic foods(too include meats) and a boiling bath canner for high acidic foods…The other answerer included a link about metal spatulas scratching the glass and causing breakage and this is correct to a degree…The main reason is in canning foods you use alot of vinegar and/or acid type additives in alot of the canning recipes and mettal utensils have a reaction with the vinegar causing the foods to come out with a slight foul taste and as well will make your foods cloudy looking…I have canned all my life as a way of life and still do till this day…If you will noticed also on alot of the recipes such as pickles that it will tell you not to prepare the vinegar and spice mix in galvanized,iron or certain other types of metal pans.They recomend stainless steel or an enameled cookware that coats the metal the pan is made of..this has nothing to do with the jars at this point….I grow a garden 12 months out of the year and can tons of food…The “scratch theroy” is really the least of the reasons…Read under “what causes color changes in home canned foods here”..This is the main reason..and directly underneath you will see “what causes jars to break during processing”..and this includes the other persons answer of using metal utensils” which is also correct..But the quality of the food and it’s appearance is the main reason….
